In Valderiz we do not stress our grapes. Ecological and biodynamic work favours a great yeast population un our vineyards, which we use spontaneous fermentations. This way, our wines reflect the terroir they come from and develop their maximum potential.

The wine making process is gentle, with long cold maceration which allows the grape to express its virtues.

There is no addition of oenological products (acidifiers, tannins, enzymes), and no pumps are used. Instead, the CO2 produced by the fermentation is used for the pumping over. There is barely any SO2 used.

All efforts of the winery aim for a perfect elaboration of wine, respecting the raw material and its variety.

Another aspect has differentiated Valderiz since its beginning in winemaking, is the use of the diverse tank materials (concrete, unusual in the area when they started) and different barrel capacities (high-capacity casks, tubs, wooden tanks…)

We work in close relationship with first rank coopers, mainly from France, for barrels of different origins, volumes, years, and roasts.

The elaboration and fining philosophy are based in creating silky and complex wines of concentrated elegance where the typicity of the grape variety is the main protagonist.

VALDEHERMOSO JOVEN

It reflects the primary character of the Burgos area, the union between winemaker and its land. Strong varietal character, ample and soft on the palate.

VALDERIZ SITIO DE VALDEHERMOSO

One of the Esteban brothers’ grandfathers had greyhounds for his hunting parties. To pay him homage, they wanted to pay him homage in this fine, tasty, long lingering wine.

VALDERIZ DE CHIRIPA

Inmaculada Cristóbal, granddaughter of “Uncle Chiripa”, is an independent woman, and sometimes, a tad lawless. Valderiz de Chiripa as born in her honor, and original, lively wine that breaks away from the regional tradition.

TOMÁS ESTEBAN

Undoubtedly, Tomás Esteban has the most significant meaning for us, created in homage to the founder of Valderiz, where the grapes are collected from our grandfather´s carefully preserved vineyard.

JUEGABOLOS

This parcel is so special and was names after its owner who played bowls. The scenery is breath-taking, surrounded by a pine forest of abundant biodiversity.

Spontaneous fermentation in concrete deposits:
The wine yolk is extracted from each tank, leaving the
amount corresponding to one barrel.
Each wine macerates with its skins for one night, until dawn.
In total, about 25 different batches or barrels are obtained.

24 months in 225 L. barrels. 50% new oak, 50% wine oak.
