The 80 yr old vineyard that belonged to the father of Tomás Esteban, is where this wine came from and it now produces only 1,500 kg per hectare.
Biodynamic agriculture is used in this vineyard.
The fermentation processes are carried out in 3,000 and 6,000 litre tanks, with the same cold macerations as for the Valderiz. No form of enzyme or yeast is used in production that does not originate from the grape itself.
